The wine

Mas La Chevalière is the southern French estate of Domaine Laroche, one of Chablis' best-known names. In the late 1980s the Laroche family brought their Chablis approach to the Languedoc, near Béziers: precise, mineral, unoaked white wines that let the fruit speak. This 2021 Chardonnay is a perfect example of that style, bright and fresh rather than heavy and buttery.

In the glass

Pale straw with green glints. The nose opens on white flowers such as acacia and elderflower, followed by green apple, ripe pear and white peach, with a touch of lemon zest and a stony, almost salty finish. The palate is crisp and textured, with lively acidity that keeps every sip refreshing.

At the table

A lovely aperitif, it really shines with seafood: grilled fish with lemon and olive oil, seared scallops or a seafood risotto. It also works well with roast chicken and tarragon, or a young goat's cheese. Our team will be happy to suggest a match from the current menu or the seasonal degustation.

Where it comes from

The Pays d'Oc covers the Languedoc-Roussillon in the south of France, between the Mediterranean and the mountains. Warm sunny days are tempered by cool night breezes, and the soils range from limestone and clay to schist and gravel. The region pioneered single-variety wines in France.

The vintage and the winemaking

2021 was a cooler, more challenging year in France, with spring frosts lowering yields. For white grapes the result was excellent: tension, freshness and aromatic precision. The grapes are picked in the cool of the night, gently pressed and fermented in temperature-controlled stainless steel, then aged on fine lees for texture, with no oak.

Appellation

IGP Pays d'Oc. This protected designation guarantees the wine's origin while allowing winemakers to produce and label single-variety wines such as this Chardonnay.
